Sous Chef

Our client is on the lookout for an experienced and passionate Sous Chef to join their culinary team in Malta.
This is an exciting opportunity for a talented chef who thrives in a high-volume hospitality environment and is passionate about delivering exceptional dining experiences. Working closely with the Head Chef, you will play a key leadership role in the day-to-day kitchen operations, ensuring the consistent delivery of high-quality dishes while maintaining the highest standards of food safety, hygiene, and operational excellence.
The successful candidate will lead by example, support the development of the kitchen team, and contribute to creating an efficient, collaborative, and high-performing kitchen environment.

What is expected from you?

• Support the Head Chef in the day-to-day management and operation of the kitchen
• Lead kitchen operations in the absence of the Head Chef while maintaining the highest culinary and service standards
• Prepare, cook, and oversee the presentation of dishes, ensuring consistency, quality, and adherence to established recipes
• Supervise, mentor, and support Chef de Parties, Commis Chefs, and other kitchen team members
• Ensure all kitchen sections are fully prepared and organised prior to service
• Monitor food quality throughout service and ensure all dishes leave the kitchen to the highest standard
• Assist with menu development, seasonal menu changes, and recipe improvements
• Monitor stock levels, assist with ordering, stock rotation, and inventory control while minimising waste
• Support the management of food costs and kitchen efficiency to achieve operational targets
• Ensure full compliance with food safety legislation, HACCP procedures, allergen management, and health & safety regulations
• Maintain a clean, organised, and safe kitchen environment at all times
• Work closely with the front-of-house team to ensure seamless communication and exceptional guest experiences
• Assist with the recruitment, onboarding, training, and ongoing development of kitchen team members
• Promote a positive, collaborative, and professional kitchen culture focused on continuous improvement

  What are they looking for?

• Previous experience as a Sous Chef or a strong Junior Sous Chef ready to take the next step
• Proven experience working within a high-volume restaurant, hotel, or premium hospitality environment
• Strong culinary knowledge and passion for delivering exceptional food quality
• Excellent leadership and team management skills with the ability to motivate and develop others
• Strong understanding of food safety, HACCP principles, allergen management, and hygiene standards
• Experience with stock control, food cost management, and kitchen operations
• Excellent organisational, planning, and time management skills
• Ability to work efficiently under pressure while maintaining exceptional quality standards
• A proactive, hands-on, and solution-oriented approach
• Excellent communication and teamwork skills
• Fluency in English; additional languages will be considered an asset
